Ingredients & Directions
Crust
½ c Unsalted butter, softened
½ c Sugar, powdered
1 c Flour
1 ½ Tbs Grated lemon zest
Filling
2 Eggs
1 c Sugar
½ tsp Baking powder
¼ tsp Salt
½ c Fresh lemon juice
Sugar, powdered for garnish
Crust
In a bowl cut the butter into the flour, next add sugar and lemon zest. Stir mixture until sand-like consistency. Press into a 9 inch square pan. Bake at 300* for 15 minutes. Allow the crust to cool.
Filling
Beat remaining ingredients together. Pour over the baked crust. Bake it in the middle of a preheated 300 degree oven for 25 - 30 minutes, or until it is pale golden. Let it cool in the pan on a rack for 10 minutes, cut it into square bars, and let the bars cool completely in the pan. Sprinkle the bars with the additional confectioners’ sugar.
