Boiled Cocoa Cookies

 

Ingredients & Directions

1 cup  Granulated Sugar 

½  cup Brown Sugar

3 cups Quick Cooking Oatmeal (dry)

½ cup Unsweetened Cocoa Powder

1 teaspoon Vanilla

½ cup Milk

1 Stick Margarine

Optional Add ins:

½ Creamy Peanut Butter

½ cup coconut flakes  

½ Nuts

In a large bowl whisk together the granulated sugar, brown sugar, and unsweetened cocoa powder. In a saucepan over medium heat melt the margarine then stir in milk. Slowly pour the sugar mixture into the saucepan and bring to a boil. When the mixture has come to a full rolling boil, set the timer for 2 minutes. Remove from heat and stir in the vanilla and oats. If using, add the options of creamy peanut butter, nuts or coconut flakes. Spoon onto waxed paper and allow to cool for at least an hour. Store in an airtight container. 

Note: Add the creamy peanut butter while the mixture is hot, before adding the vanilla and oats.
