Peach Cobbler with Whiskey Sauce

Ingredients

  • Double crust pie shell

  • 1 1/2 c. sugar

  • 1/4 c. bourbon whiskey

  • 1/2 stick unsalted butter

  • 12 large peaches or 2 pkgs. frozen peaches

  • 2 tbsp. lemon juice

  • 2 tbsp. cornstarch

  • Whiskey Sauce for Cobbler

  • 1 c. sugar

  • 1/2 c. whiskey

  • 2 c. hot water

  • 1/4 tsp. nutmeg

Instructions

  1. Scald and peel peaches, saving the juice then cut into thin slices.

  2. In a large bowl add peaches with juice, sugar, lemon juice, and cornstarch.

  3. Mix well to coat evenly then set aside.

  4. Prepared pie shell

  5. In a pot over medium to low heat melt butter, add whiskey and peaches.

  6. Cook gently until heated through about 5 minutes

  7. Put peaches into pie crust then cut crisscross strips to put on top of peach mixture.

  8. Bake in a 400 degree oven until brown. Optional serve with Whiskey Sauce.

Notes

Whiskey Sauce for Cobbler:

In a pot heat sugar and 2 tbsp. water until it becomes caramel. When light brown slowly add the remaining water. Cook until the caramel is melted. Add whiskey and nutmeg then serve hot.
