Peach Cobbler with Whiskey Sauce
Ingredients
Double crust pie shell
1 1/2 c. sugar
1/4 c. bourbon whiskey
1/2 stick unsalted butter
12 large peaches or 2 pkgs. frozen peaches
2 tbsp. lemon juice
2 tbsp. cornstarch
Whiskey Sauce for Cobbler
1 c. sugar
1/2 c. whiskey
2 c. hot water
1/4 tsp. nutmeg
Instructions
Scald and peel peaches, saving the juice then cut into thin slices.
In a large bowl add peaches with juice, sugar, lemon juice, and cornstarch.
Mix well to coat evenly then set aside.
Prepared pie shell
In a pot over medium to low heat melt butter, add whiskey and peaches.
Cook gently until heated through about 5 minutes
Put peaches into pie crust then cut crisscross strips to put on top of peach mixture.
Bake in a 400 degree oven until brown. Optional serve with Whiskey Sauce.
Notes
Whiskey Sauce for Cobbler:
In a pot heat sugar and 2 tbsp. water until it becomes caramel. When light brown slowly add the remaining water. Cook until the caramel is melted. Add whiskey and nutmeg then serve hot.
